Angel Biscuits

Please forgive me for not having posted anything in a while, it became overwhelming to try to keep up with 3 different locations to post my culinary experiments & especially with a new job.  And then w/a camera that was acting up, but we got a new one for Christmas & the pictures are of a much better quality now, as you can see.  But thank ya'll for sticking with me, I truly appreciate it!  Happy New Year's Eve!!!  So with that being said, here's the latest:

Thanks to Taste of Home for this amazing recipe, this is our official biscuit recipe!!!  Took me approx. 20 mins to put it together, 1.5 hrs to rise & then about 8 mins in the oven & that was it.

1/2 ounce active dry yeast (2 packages)
1/4 cup warm water (110° - 115°)
2 cups warm buttermilk (110° - 115°)
5 cups all-purpose unbleached flour
1/3 cup sugar
2 teaspoons salt
2 teaspoons baking powder
1 teaspoon baking soda
1 cup shortening
Melted butter (I used 1/2 stick unsalted & add a bit of salt to it)


1.  Dissolve yeast in warm water. Let stand 5 minutes. Stir in the buttermilk; set aside.

2.  Meanwhile in a large bowl, combine flour, sugar, salt, baking powder and soda. Cut in shortening with a pastry blender until mixture resembles coarse meal. Stir in yeast/buttermilk mixture; mix well.

3.  Turn out onto a lightly floured surface; knead lightly 3-4 times. Roll into a 1/2-in. thickness. Cut with a 2-1/2-in. biscuit cutter. Place on a lightly greased baking sheet. Cover and let rise in a warm place about 1-1/2 hours.

Bake at 450° for 8-10 minutes (8 mins worked perfect for me).
Lightly brush tops with melted butter.

Yield: 2-1/2 dozen (I got 35 biscuits)
